GLUTEN-FREE CORN CASSEROLE RECIPE: (DAIRY-FREE)

A recipe that is almost like a family tradition. It is loved by my entire family, and I guarantee, once you have it, you will love it too. It is the perfect blend of sweetness and spice. It also has a smooth and creamy consistency like cornbread. This recipe is a must for special occasions and family meet-ups

This recipe has been an integral part of my life, almost since childhood. We would not have any Thanksgiving without a corn casserole. This recipe is one of the finest and easiest to make. You can easily prepare this from all the ingredients readily available in every household. In order to save your precious time, you might consider preparing it the night before, as it becomes almost fresh when you preheat it the next day. Jiffy Corn Muffin Mix is used in the authentic recipe, but as we are preparing it in a modified version, which is a gluten-free version, we will use gluten-free cornmeal and all-purpose flour. Don’t worry! The healthier version is not any less devouring. It is so good that you might not be able to differentiate. If there is one recipe, that my entire family looks forward to every Thanksgiving, it is this recipe. I am quite sure you will love it too! You will surely become a fan.

HERE IS THE LIST OF INGREDIENTS:

  1. Gluten-Free Flour & Cornmeal: they are necessary for giving a nice consistency and structure to the dish.
  2. EGG: it is an essential component to bind all the ingredients that are used in this recipe. One can also choose an egg-free vegan casserole.
  3. UNSALTED BUTTER: in order to provide a creamy texture, this ingredient is a must. Also, it enhances the flavor immensely.
  4. 15 OUNCES CREAM STYLE CORN(PREFERABLY GLUTEN-FREE): My personal favorite brand is Del monte. It is one of the most trusted brands with gluten-free options.
  5. 15 OUNCES REGULAR WHOLE KERNEL CORN: One can choose any brand. But using fresh corn is preferred.
  6. SOUR CREAM: Considering dairy-free casserole, 7 to 8 ounces of yogurt( dairy-free) mixed with one teaspoonful of fresh lime juice can be used.
  7. SUGAR: A hint of sweetness does no bad. In case you are on a no-sugar diet, you can skip this step.
  8. BAKING POWDER: To prepare a fluffy casserole, baking powder should be used.
  9. SALT: According to taste.

CORN CASSEROLE AND ITS VARIETIES.

Everyone’s taste buds are accustomed to a special ingredient. This has led to the development of a number of varieties of corn casserole. Choose your favorite:

  1. Cheesy Corn Casserole: Avoid sugar and add cheddar cheese.
  2. Spicy Corn Casserole: To give that hint of extra spice, add jalapenos and one teaspoon garlic powder. You may also add cheese for creaminess. Avoid sugar
  3. Sweet Corn Casserole: If you have a sweet tooth, do not feel shy to add half a cup of sugar more. You can also go for maple syrup or honey but use half the quantity that is one-fourth cup.
  4. Egg-Free: The egg gives a fluffy texture, otherwise it is not required. So you may skip it if you want to.
  5. Vegan: All you need to do is substitute simple unsalted butter with vegan butter earth balance sticks. Also, you must use dairy-free yogurt instead of sour cream.

GLUTEN-FREE CORN CASSEROLE RECIPE PREPARATION:

The recipe takes not more than an hour to prepare. So just follow these simple steps and prepare yourself for the dish of a lifetime.


  • 1) Begin by preheating the oven to 350 F. Use a 3 qt ceramic dish and grease it properly. If not available, use an 8* 8-inch casserole dish.
  • 2) Drain the water from the whole corn kernels. Take a large bowl, add the other ingredients and mix everything nicely.
  • 3) Take this mixture and transfer it to a casserole dish . Bake uncovered for 50 to 55 minutes. The outer edge turns slightly golden-brown and the center turns golden-yellow.
  • 4) Allow the casserole to cool for about 10 minutes before it is ready to serve.
  • 5) Do not dump any leftover casserole. You can store it in the refrigerator and store it for up to 4 days.

 Yes, you can. But make sure that the premix is gluten-free and check the ingredients and labels carefully. You can

2. HOW TO PREPARE DOUBLE GLUTEN-FREE CASSEROLE?

Use twice the quantity of all ingredients and use a 9* 13-inch baking dish. The cooking may take 10 to 15 minutes extra.

Be a responsible buyer. Thoroughly check the labels and nutritional facts before purchasing anything that claims to be gluten-free.
