This recipe is not only delicious but also easy to prepare with common household ingredients. For convenience, you can make it the night before and simply reheat it the next day. Although the original recipe uses Jiffy Corn Muffin Mix, our gluten-free version substitutes gluten-free cornmeal and all-purpose flour. Don’t worry! The healthier version is just as tasty. This recipe is a family favorite every Thanksgiving, and I’m confident you will love it too.

- Gluten-Free Flour & Cornmeal: Essential for consistency and structure.
- Egg: Binds all the ingredients. For a vegan option, omit the egg.
- Unsalted Butter: Provides a creamy texture and enhances flavor.
- 15 ounces Cream Style Corn (preferably gluten-free): Del Monte is a trusted brand.
- 15 ounces Regular Whole Kernel Corn: Fresh corn is preferred.
- Sour Cream: For a dairy-free casserole, use 7 to 8 ounces of dairy-free yogurt mixed with a teaspoon of fresh lime juice.
- Sugar: Adds a hint of sweetness. Skip if on a no-sugar diet.
- Baking Powder: Ensures a fluffy casserole.
