Like most keepers finding a really good tasting gluten free pancake mix doesn’t come easy.  You could easily spend upwards of $50 on gf pancake mixes before you find a winner.

Lucky for you today I’m going to share with you not only my favorite, but honest to goodness the best gluten free pancake mix, short of mixing your own flours, but seriously who has time for that? I don’t!

Coconut Carmel Sauce

You might think the syrup being elegantly poured over the pancakes is something I got at a farmers market or maybe its the butter flavored syrup thats always on sale at the grocery store.  Nope, it’s Coconut Caramel Sauce and it’s outstanding poured over pancakes, waffles, muffins, and cakes.

To make this delicious caramel sauce simply bring butter (or coconut oil) and honey to a boil.  Boil on medium high until it reaches a nice caramel color.  Remove from the heat.  Pour in the coconut milk.  Whisk until smooth.  Naturally the syrup will be a little runny but you can give it a bit more viscosity by simmering it on med heat until it reduces a little and gets thicker.

*1/2 butter (or cup coconut oil if preferred)

*1/2 cup honey

*1 cup coconut milk

    I haven’t tried this mix. So far my fav g free pancake mix is King Arthur. Even my husband loves it – while he usually loathes every baked g free item I’ve taken home save for an occasional scratch recipe I’ve perfected.

      King Arthur’s pancake mix is a close second, almost a tie with Pamela’s. For anyone who can’t do dairy I’d definitely recommend King Arthur.

    My husband & daughter are celiac, but ALL of the family (non-celiac daughter, both sons-in-law, and grandsons LOVE Pamela’s Pancake Mix pancakes, even more than any made with regular flours – another of their favorites w/Pamela’s Mix is the coffee cake on the back of the lg. package – It is truly amazing, for a gluten free product!,
